Freezing leftover chicken halfs ?

Does chicken dry out after freezing ?

I was thinking about freezing 2 halfs, vacuum seal freeze, for another rainy day ?

Any advise on how best to do it ?

Any thoughts comments appreciated.

I vac half chickens all the time. Just halve the chicken after it cools, allow to finish cooling, vac, seal and freeze.
 
Vac seal them and don't worry. They won't dry out. Works fine to heat them up in the bag (in hot water 160-180 deg) as well. That will keep them moist too and not over cook on the reheat.

Once reheated, remove from bag and place under a broiler or on the grill to crisp up the skin or add glaze, etc.

Works well for ribs too. Most anything.

I have a small family and recently cooked 3 whole fryer's.

First night had the chicken, right off the smoker, excellent.

Second night, had the pulled the meat, from the second chicken, little gravey, mashed potatoes, filling sides etc.

Third chicken, let cool, cut in half, v.seal, freezed and will eat in the near future.

I'm kinda of a goof ball, i would be happy to eat the chicken the 3rd night in a row but my family, kinda wants a little more varity, than me. Therefor freezing it.

This season I will try to cook more food "per cook", hopefully to have more leftovers for more enjoyable meals. In fact this is the first time I smoked something on the lower cooking grate. It came out better than I would have thought.

My .02 worth: when I cook beer can chickens I usually do 4 at a time. Three get cut in half and vacuum sealed, then into the freezer. They reheat easily and taste almost as good as they do when coming straight off the WSM.

Larry,

How are you reheating these? Was about to do a big batch of beer can chix myself and had been wondering. Are you just throwing the vac seal bag into a water pot to boil? That's what I do with pulled pork, etc but didn't know if it would work as well with chicken.
