Found a nice trimmed brisket point that included the thicker part of the flat.
Rubbed it with a little brisket marinade then dry rub and onto a wire rack to dry out a little overnight in the fridge.
Nice. I have a hard time finding those. If I had to do either a point or a flat, I'd rather do the point as well. I can find flats all day long but if we want to do a small cook, we like the point.
Still chugging along. Dropped it on about 3:30am. Added more pellets at about 10:30am. Ran perfect in between but what little pellets were left were not going to funnel down and low fuel message was on display. But it did run about 7 hours at 225 with no touching. My best no hands record to date. I’m in the stall now at about 167. Bark looks fantastic and I might wrap in paper soon.
