Wow I didn't know I had a secret that I could share. Glad to help.

When I first got my wsm I didn't do a whole lot of trimming but left the fat cap. When I opened my BBQ shack I started taking the fat cap off. Made the pulling part a bit easier. After a few months I started leaving it again and found the cleanup much easier and a lot less meat stayed on the grates. Also sometimes I can't get to check the butts when I need to and having that fat cap there helps buffer that problem. The last good thing about keeping the fat cap on is that small layer of meat that is in the fat cap goes great in Keri C's hog apple beans.
