Flat breads

I was in Charlotte NC a few days ago, and sat down for a beer at Wolfgang’s Bistro. They served the best flat bread. I have no problem paying $3.75+ for a domestic beer (even though Miller Lite - South African owned - and Bud - Belgian owned - are no longer domestic

) when you get a yummy treat with it. I know it had sundried tomato and basil, but I cannot figure out the cheese profile. I just tried sun dried tomato, fresh basil, garlic infused oil, S & P, and some aged parm. Not it. Good, but not it. I think it is the cheeses. Can anyone suggest some good cheese combinations that would compliment this type of appetizer, or you favorite recipe?

Are you talking 'flat bread' as in pizza, foccacia, pita, naan, lavash? --or as in crisp and cracker-like? Topped and baked or baked then topped?
 
Gary...I just scoured his website...tons of recipes from the menu's but not this one. Although it is mentioned on the dinner menu as Parmesan crusted flatbread. BTW...I love it to, very addictive!!
