First WSM smoke- Baby Backs

The local butcher had a deal on baby backs. Buy 2 get 1 free. So I figured today would be a good day to smoke. This is my first smoke on my new (to me) WSM 18.5 that I recently got on craigslist. I also picked up a Maverick 732. Smoke is going well so far. Using apple wood and one small chunk of mesquite to give a little stronger smoke taste. Should be finished around 6 pm tonight. I have been running the smoker temp around 240 degrees. I have had to close down two of the bottom vents and the last one is only open 1/4. I was up in the 280s with 2 open at 1/3. Its only about 40 degrees here so figured I would have had to have the bottom vents open more. Oh well, running pretty steady now. I decided to go with a foiled clay saucer instead of water. Anyway, enjoy the pics, Ill post the finished pics later tonight.

on the left we have famous daves sweet and sassy bbq sauce on the right a homemade Captain Morgan bbq sauce. First time making the Captain Morgan sauce and it turned out awesome!

Plated pic. Potato salad (not homemade) Bushs grilling beans, bourbon and brown sugar, some oven roasted asparagus and zucchini and the ribs. Drinking Shock Top honeycrisp apple wheat!

Everything was very good, and LOVE the WSM!! Cant wait to do many more cooks!!!

Wow, you are quite ambitious doing your 1st cook with ribs. I take it you have prior experience Q'ing on a different smoker.

Ribs are considered to be one of the harder things to smoke by most people. I know it has taken me much longer to learn ribs vs. boston butts and chicken.

Looks like you are off to a good start.

As many others will tell you, the WSM will run hotter the first 10 or so cooks. It needs to build up a bunch of gunk and grease on the inside that seals the edges and controls the airflow better.
 
Ive smoked a few times on my kettle and after babysitting that thing for a year, I was feeling the need to upgrade to a real smoker.
