first time ribs on wsm a success!!

Assembled my wsm this morning and followed the BRITU method of time. I used corkys rub instead. Also I couldn't find wood chunks so I used 3 handfuls of apple wood chips soaked and 1 handful of hickory wood chips soaked, adding them every hour or so. I had trouble keeping the temp at 225. It was always either 200 or 250 most of the time. The only trouble I really had was getting the fire started. I had to use some extra instant light to get the original kingsford started. I also wasn't sure how much charcoal to use so I used the entire 8 lb bag. Overall, it was a success. Next weekend I may try a butt.

J-

Best to light the charcoal using a weber chimney starter. I would stay away from using any instant light kingsford for smoking. Sounds like you are well on you way...good luck.

Yea I tried to use a generic chimney but I just couldn't figure it out. The kingsford I used wasn't instant light. So it was only just a little instant light left over from grilling. I'll try the chimney again next time.

Four sheets of newspaper crumbled under the grate in the chimney, fill to to desired level with charcoal, light paper. My weber chimney and stubbs is usually ready in 15 min.

Temperature control on a Weber is a skill to learn. It will become easier as your skill develops. It sounds like your control was adequate and we're happy to hear you got good results.

I've used generic and Weber branded chimneys and they should all work. When I was using paper, I typically added one sheet at a time until the coals had gotten a good start. I also like the paper that some shippers use as an alternative for styrofoam peanuts. Lately I have just been setting the chimney on the side burner of a propane grill. In a minute or two the charcoal has a pretty good start. (Definitely the lazy man's way to get the coals going.

Then this a.m. when I used 4, I had an awful time getting it too burn (too tightly rolled I guess so air couldn't get in).

Ended up crumpling one sheet, set that on fire and then put the chimney (still with the four sheets) on top and that did the trick.

I like to use 3 sheets of paper towel, drizzled with a little cooking oil.
Plenty hot and no ash.
20 minutes later, it's good to go.
When using wood chips, I do soak about a cup of chips, wrap in 2 layers of HD foil, makes about a 4" packet, poke it one time with a fork, and put it on the 'coal, holes up.
Plenty of smoke.
