First time pork butts

Well, not really....I've been smoking on my Masterbuilt electric box smoker for 3 years and have done many different things with great success. I just purchased the 2009 18.5" WSM (through Amazon using tvwbb link) a couple of weeks ago and this is my first butt smoke using charcoal.

I bought a double pack at Sam's weighing 15.89 lbs. Both butts were rubbed down 6 hours in advance, one with my homeade "kitchen sink" rub and the other with the Southern Succor rub. I am using the Minion method and started with 20 lit, 3 chunks cherry and 3 chunks apple.

The butts went on at 7pm eastern and we are holding fairly steady at 235* (at the lid). I will post pics once I figure out how to and keep updating through the night. Hopefully, the bourbon doesn't sidetrack me

PS - Thanks for all the great information and help you guys provide on a daily basis. This is my first butt smoke with charcoal and somehow I felt like a pro before I even lit the chimney. This site is great!

Butts are a great way to christen a WSM! Take lots of early pics .. She'll not look as pristine as that again.

Five hours into the smoke and the WSM is holding steady at 240* at the lid. This thing is amazing.
 
Twelve hours into the smoke and temps are holding at 240*. I woke up at 4am and they were hovering around 220* so I changed the vents from 25% to 50% open. The WSM is amazing at holding and maintaining temps...I've read it 100 times on this forum but to see it with your own eyes is fantastic.

The two butts are about 9* off from each other. One is 170* and the other 179*. They are about the same size so I was a bit surprised but not really a big deal I guess.

Overnight but smokes are one of my favorites. I like to savor the flavor so to speak. You are correct that this wsm is one of the easiest cookers you will ever use. Fire it up and let it do it's thing! Keep the pictures coming. Vince
 
Well, 18 hours and one butt is 198* and the other is 185*. I'm not sure why there is such a difference as both were about the same size but I went ahead and pulled the 198* butt and foiled it to let it rest. Hopefully, the other one will be done soon.

Things went pretty smooth for my first overnight cook with charcoal. The WSM was amazing and held the same temp for 18 hours with one full ring of Kingsford blue bag. I never added any additional fuel. Conditions were ideal with mild temps and no wind but wow...

The butts turned out great although one was full of fat and the other was fine. I think that is the reason one of them took longer than the other to get to 200*. All in all a great first experience with many more to come.

So the lower temp one was the one with more fat, eh? I've wondered that myself as I've sometimes had one butt that's fattier than the others in a multiple butt smoke. Since fat melts with heat, maybe taking them off at the same time isn't the best idea???
