First time not foiling ribs

OK, this is the best part... if you are having company, they will most likely be very interested in the smoking process so get them involved!

I would actually try to time it so that your company is already there when you take the shoulder off the smoker. They will be interested!

Serve some drinks and appetizers and assign pullers at this time... after an hour, start pulling... usually takes 15-20 minutes if you have 2 people.

Then while serving the food, make sure to thank your pullers! Enjoy.


As for the ribs question... I used to foil my ribs after the 3rd hour and then let them go for another 90 minutes and this guaranteed fall off the bone ribs but after awhile, I decided I like to have a little bite to my ribs so I stopped foiling. After about 5 1/2 hours, they`re done.
