First Time Firing Up the WSM

Hoping to fire up the WSM for the first time this weekend. Should I do it dry, with meat, or does it matter?

Hi James. WSMs are enameled inside and out, they do not need seasoning. The first couple of cooks you do, the cooks will tend to run a bit hot until it builds up some gunk. Just put the meat on and go for it!

Some chicken if you want a faster cook, throw a Boston Butt on there if you want to go for a longer cook. Either way, you'll learn quite a bit and have some good Q as well!

You should wash off the grates in case there is any factory packing oil to prevent rust on them.
