First time fatties question

I am thinking about trying some fatties tomorrow. I am planning on picking up a few rolls of various Jimmy Dean flavored sausage. I want to stuff some with onion, peppers, garlic and mushrooms. Should I sauté the veggies before I make the fatties or will they cook with the meat? I am planning on 250 - 275 for about 2 - 3 hours or until I get the meat to about 170. Does this sound correct?
 
For what its worth, when I make them I do saute veggies before rolling. They came out great. But I think they would cook just fine if you put in raw.

I'd go for a lower finishing temp. They will continue to cook a bit after you pull them. I take them off at 155*
 
From what I learned on Bobby Flay's Meatloaf Throwdown, is that you should sautee the veggies as their flavor infuses with the oil and the oil helps the flavor permeate throughout the meat. If used raw, they'll 'steam' and the flavors will be 'localized'.
 
I would saute the veggies a little bit. One thing go light on the smoke. Last time I did one I ran my smoker like a choo-choo train and it was too much.
 
Ron - those fatties look absolutely delectable! I'm getting hungry just looking at those pics....

I take it you'll be doing these again sometime soon, now that your first time turned out so good, right?
