So I got my new Weber Bullet on Friday and was smoking by Sunday. I chose a 6 pound pork butt for my first time. I smoked using Hickory and Apple wood. I didn't start with enough fuel when I first started, so I was playing catch up most of the day. It took about 6 1/2 hours to get to a perfect 190 degrees. I was happy to find a nice bark, and even more pleased to find a darn nice smoke ring. Meat pulled of the bone like nothing.
The only thing I wish I would have different would have been to get a shoulder that wasn't "enhanced" before I got it. Would have preferred to do my own injection. My BBQ sauce had a bit more kick than I would have preferred. Think I will go with a brown sugar/molasses mix as opposed to heat. I but some baked beans on the bottom grate with a couple of hours to go. I'll never make them another way again!
I was a little nervous to start, but now I am encouraged for my next smoke. I think a nice Turkey breast will do the trick. I am hooked!
