First smoke today!

I got the call on Friday from the hardware store that my special order 18.5 WSM was in and waiting for me. I assembled in the foyer of my house that evening after the kids went to bed. In the morning, they found it pretty funny that a black droid was waiting for them! On Sturday, I bought a rack of St. Louis ribs and an 8 lb brisket for an inaugural smoke. I made up a couple of rubs. Lit off using the minion method with some big mesquite chunks. The meat went on Sunday (today) at 10am. The ribs just came off after 4 hours, and I figure the brisket has another 4 hours or more to go. The WSM is running around 275 with all vents wide open. I think the in lid guage is pretty accurate, having compared it to 2 dial and 2 electronic themometers and they agree to within 5 degrees. So far so good. I love this bullet!
 
It sure sounds like you're starting off right. The WSM is a great cooker. Enjoy.

I did my first smoke yesterday, sunday.2 big spare racks and some chicken thighs.Put the spares on first useing minion chimney 2/3 full
Used Harry Soo recipe,WWWWWWOOOOOOOWWWWWWW.
Brought in my leftovers to work let the guys try some, said best ever.Awsome first smoke
 
I pulled the brisket out after 10 hours. It was 160F internal. I wrapped in foil and finished in a 300F oven to 190 internal and let it cool slowly to about 140 then tasted it and put it in the fridge. I am taking a big old piece of it with fixins for sandwiches to the hardware store guys for going the extra measure to get the WSM to me fast (long story).
