First smoke on my new/old WSM


 
My first smoke on my new/old WSM was babybacks. I smoked them for 5.5hrs. Don't ask me why.
They tasted great but were way to tender for my taste.
Used apple for smoke and a rub that was given to me by a friend (don't know whats in it)
My wife loved them (she's a fall off the bone type of girl)
Next time I will follow the advice I was given on this site.
The WSM is great. She held fast between 235* and 260* for the entire cook.

Yep, my wife likes the fall off the bone a bit more then me also. I flip my ribs after three hours, then start checking every half hour or so.
They look good enough to eat, fall off the bone or not!
 
I think we were conditioned to believe that "fall off the bone" ribs are the way it should be since youth. It's what you see advertised at restaraunts to this very day. In fact I think most outside of the BBQ world associate a great rib with "fall off the bone". And don't misunderstand me, I've had some pretty **** good fall off the bone ribs in my time. But now that I understand the difference between done and overdone in our BBQ world, I always strive for "done". And when they're done right, no one thinks twice about "fall off the bone"

Good looking ribs and welcome to TVWBB. Just a suggestion, but I would highly recommend that you get a drip pan or something under your WSM. Putting your lid right on the concrete will put a ring of goo on the concrete and the lid will pick up abrasive particles and possibly chip. Also, the WSM is known to drip from the vents - again leaving a nasty mark on the concrete.

Those look great, Thomas. Done is done, regardless of what that may be. Done is in the eye of the beholder, but I like mine with a little bite thru, not FOTB even though my family likes them that way.
