Thanks for the kind words, the enchiladas I had last night were the best I ever had!!!
As for water in the pan, Yes I did. What I didn't do was foil the bottom of the pan. . . Last time I forget that I'll tell you.

This weekend is going to be burgers on old gassy, wings on the Performer, some kind of yard bird and kielbasa on the WSM, and just to get them all going I'm going to make the grandkids hot dogs on the Smokey Joe.
At least that's the plan. . . Well see once the daughter in law and the wife decide on what's coming out of the job jar. LOL

Yeah, I always get a kick out of using all my Webers at once, but since it's just my wife and me (we have a daughter, but she's not even 2 yet so her BBQ intake is pretty low) that doesn't happen very often... Well especially now that I have the WSM and it holds so much food.

I'm still a "water in the pan" guy myself, at least for now. I'll probably experiment more with that during my second year of WSM ownership. Anyway, I am curious about how you disposed of your leftover water. I've tried several different tactics and have yet to settle on a favorite. What did you do?

I have an old porcelain coated pot that I put the coals and water in when I'm done grilling.

I keep it under the Performer when I'm not using it.

Even when I don't use water while grilling I pour water over the coals. Leave it sit away from the house for a day to cool, and pour it into small doubled up trash bags. It makes a mess in the pot, but it's easy to clean with a rubber Bondo spreader.
It held the coals and water from the 18 1/2 WSM and a full large starter of coals and water I used in the Performer, along with the 10 or so I used in the Smokey Joe.
