First Smoke - Apple Wood Chickens

First smoke on my new 18.5” WSM - beer can chickens smoked over apple wood using Maple Leaf Briquette Charcoal. I was blown away by how steady the WSM held the temperature at 225. Next up, BRITU...






Also going to look into foiling the water pan next time, was surprised the outside of the pan was a bigger mess to clean up than its interior.

FYI I foil my water pan by putting a square of foil inside the pan to catch any leaks. Then I cover the top of the pan with heavy dute extra wide foil. If I leave just enough foil to grab around the edges I can push down the foil a little in the center to make a well so juices don't run over the sides. I never foil the bottom,
