First Rib smoke using BRITU method.

Hello Folks..

After many months or research and searching for a smoker, I decided to puchases the WSM while abroad on vaction in Fl this spring.
I finally decided to fire it up yesterday after puchasing 4 slabs of Pork ribs from Costco.
I used the BRITU rub and method throughout the cook and the ribs turned out fantastic!. I used an internal digital thermometer on one slab and had a BBQ temp Gauge dropped down into one of the vent holes in the lid. Used 9lbs of Kingsford Charcoal and added another couple of pcs of charcoal from another supplier halfway through the cook. Found that I didn't intially have enough fuel to complete the cook hence the addition of a few pieces of charcoal.
End product took 7hrs to complete yielding 4 slabs of juicy ribs. The ribs require minimal effort to remove from the bone. Five handfulls of hickory chips were used.

congratulations on the purchase of your WSM and on your successful rib cook. Doing them right the first time is great! It took me a 2-3 times to really get the process down right for me.

Congrats on first smoke. You have to be very careful.....because you just might become hooked on smoke. I know we are. We would rather have BBQ than steaks. And steaks are pretty darn good stuff!

Have alot of fun with it. I really enjoy my smoke days. Hope you do to!

I hear ya!. Everyone loved the ribs...rave reviews for sure. going to try a beef brisket this weekend.. but don't knwo what a brisket is.

I'm from Canada and have never seen a beef brisket at Costco or other supermarket's.

Do they fall under another name?

Darren, not sure what part of Canada you are from but here in SW Ontario you mainly get Brisket from a butcher. make sure you specify "packer" (untrimmed) or you will get no fat whatsoever. Also make sure that it doesn`t say "pickled"...had that happen just before we went to a competition...noticed it just before the checkout.

Thanks for the reply. Maybe that's why I couldn't find it at the supermarket and Costco.
I'm over here in Southern Ont near the Falls and we do have some good Buthcer's in the area.
I'll have to check with them. What's the going price on packer briskets these days?. What's a expensive price , low price on these babies?.

I am not sure about low or high price but I pick up whole packers from wally world for about $1.10 a pound. I got one from a butcher shop once and it was around double that price. That is in US dollars also.

I really love wally world. the day before the sell by date they usually drop it by 30% or around 90 cents a pound. Every time I am in there I check the sell by date on them and go back the day before to see if they are marked down. I can usually walk out smiling with 2 briskets.
 
Jeff, no briskets at wally world here...not yet anyway.

Darren, a fair price here, from a trusted butcher, giving you an AAA grade brisket is around 3.49/lb...

thats what I pay anyway.

are you the Darren from "BBQ Effect" ?

Thanks for the input. I went down to a local Butcher shop and he want's 3.99lb.
Since I live about 20mins from the border..I may take a run over to Wally World and grab me a packers brisket.Especially at those prices and even better with the exchange rate!.

Oh.. Harvey.. I am not the Darren from the BBQ effect...sorry .

Darren - so you know, I can't find brisket out my way (Northeast, just outside NYC area) for less than $3 per pound. With the conversion rate, $3.99 isn't out of the ordinary, and still cheaper than what my costco sells it for.

FWIW, we don't have any super wal marts around that sell meat, so that doesn't help either.
 
In Vancouver BC, we go to Washington State and get our Brisket for about $1.15/lb USD. Far cheaper than our $3.69/lb CDN. Ribs too. USDA Select I believe. Similar to Canada Grade AA.
And we got a 6th place in Brisket with it too, so that helps! (At our 1st comp!)

Hi Darren, welcome to the board. my first cook was the BRITU as well thats all it took for me to get hooked,My wife was won over after I did the The Renowned Mr. Brown over night cook,i have used the Cooking Topics section of this board for all my cooks and not a bad one yet

Thanks for the replys.

I did another 4 racks of ribs BRITU method but used Pork Back's this time instead of Pork Sides. I used a rib rack this time and they turned out really good again.Turned them at the 3hr mark and bumped the temp up to 250-275 for 45 min and they were complete.Total time for this cook was 4.5 hrs.
Next attempt will be at a Beef Roast. Not sure how long they take , but going to try one out this weekend.
