First Pork Butt today

I'm in the process of cooking up my first 8lb pork butt right now. Should be ready to pull in about an hour.

One mistake that I already see that I made was when I was trimming the fat yesterday I ended up following a fat run so far that it split the butt in half. I tied and cooked the 2 halves rather than tie them together. I see that this was my mistake because the meat cooked WAY too fast! Oh well, looks like pulled pork for brunch today!

Other than that it's looking pretty good. I will post a few pics when I unwrap the butts and pull them.

Thanks to everyone on this site for all the awesome tips and tricks and advice that I have been able to absorb and finally put into action!

Brian - many of us don't trim at all, and just toss out the non-rendered fat when we pull the butt (which in some cases is minimal, if any, since they cook so long).
 
Brian, just noticed that you live in Monroe and not too far from me. I live just east of MIll Creek in Silver Firs.

Going to a potluck at a neighbor's this pm so I will probably light up one of my Kettles for something "quick."

The butt coming apart is no big deal since you are going to pull it anyway.

Doesn't sound like a major screw-up -

Look at it this way, you get to destroy the evidence of your mistakes by eating them! (I've already made quite a few delicious mistakes.)

That's one of the nice things about smoking pork shoulder / butts - they're very forgiving.

Keep trying - you'll get better & better as time goes by
 
Brian, I never trim my fat on butts. The majority will render off anyway. I feel it helps keep the pork moist during the long cook plus you can remove what doesn't render when you pull. Saves you that extra step on prep time
 
I never used to trim my butts, but after trying it once I will never go back. It has no affect on the moisture in the meat and by trimming the meat...especially the fat cap you greatly increase the amount of bark that you get, which is the best part!
