Hello everyone, Tried my first pork butt on WSM New Year's Eve. It was unbelievable! I cooked for 12 and 1/2 hours at 220-225 degrees to an internal temp of 189 degrees. I used the renowned Mr. Brown recipe with great results. The rub was a little too hot for my taste but my family loved it. Does anyone know of a better rub maybe a notch down in the "heat" department. I would definately do the Mr. B again, just checking options. Also, I got some OK joe's bbq sauce for Christmas and, IMHO, it would be very hard to beat. Some of you guys may want to give that sauce a try with your pulled pork. Thanks to everyone for this wealth of information on this site. It is a blessing to find this kind of fellowship. If you're new like me and have not tried a pork butt on the WSM, definately make it your next cook. It beats any local bbq I have had in my city, IMO. Sincerely, DeeC.

Happy for you the butt turned out so good... I agree that it is an awesome piece of meat when done right...
I also like the Mr. Brown recipe, but my family and I find it a little on the "hot" side... I cut back on the black and red pepper and go with it !! Works for us...
Have a great weekend !!

Congrats on your butt. Wild Willy's is a
nice basic rub in Smoke and Spice and it is not hot to my taste at all. Give it a try.

Thanks Mary Ann, I'll check out Wild Willy's rub as well. I have that book so I will check it out pronto. Sincerely, DeeC. /infopop/emoticons/icon_smile.gif
