First Overnight- Suggestion?


 
Hey all,
I'm finally doing my first overnight smoke tonight in preparation for tomorrow's dinner. I got two 8# butts yesterday, slathered and rubbed.
Rub consisted of
Brown sugar
Salt
Smoked Paprika
cayenne
onion powder
granulated garlic
pepper
greek seasoning
ancho chili powder
all spice

I'm going to put them on tonight around 9:00 so they'll be done around lunch time or so. That'll give me plenty of time to make the beans and let it rest before dinner.


Any suggestion or advice on the overnight smoke? I got new batteries for the therms and there's only a 20% chance of scattered showers tonight. I'm using clay saucer and RO lump. I've gotten good stead 240 temps for over 8 hours with it so I'm hoping to actually sleep!
 
Unless you kick the temps up some I really don't think that the butts will be done at noon. However, your schedule sounds some what flexible so you should be alright.

I haven't done butts that size that quickly.

If they finish early it's ok because you can just leave them in the cooler longer. If they finish later, you eat later.
 
Did two 8 lb butts recently at 275*, higher at various times during the cook. They were done in about 11 hours and tasted just as good as any I've cooked lower. Started at about 7AM and they were ready at about 6PM. However, I agree with the above replies regarding time if you are going to smoke at 240. (lid temp?)
 
I got the butts on at 7:45 per your advice. I'm rolling at 50% vents and the temp is hovering around 240. I plan to cut the vents to 0% 0% 20% once the temps of the butts rise a little. Usually i can get a nice steady temp when the butts hit 140 or so.
I did them early to ensure they'd be done by dinner tomorrow.
I've got BBQ smoking right next to me, Dylan on the radio, vodka soda in hand, black mutt wandering around and a wireless laptop. Life couldn't get much better than this. Too bad wife's inside watching the Olympics!
 
I just got woken up with the ET-73 alarm. Temps when down to 170 in smoker as a large storm front is hitting. It was really lucky actually cause I could "weather proof" the WSM before the rain. I'm waiting for the temps to get up and will try to vent properly.
