First overnight cook with K

I have lots of K from HD sales, but I have always used Stubbs for really long cooks. Last night I decided to use K.

I cooked 2 butts for 11 hours and when I took them off, the charcoal was almost completely burned out. With Stubbs, I usually have some left after a cook like that.

I filled the ring and used the Minion Method with 30 coals to start. Kept at a steady 240 all night. Clear skies, no wind, about 50 degrees for the low. Never paid attention, but I guess Stubbs lasts a little longer.
 
Lew, I'm curious about your cook.

Did you measure 240 with your dome gauge, and how much did the butts weigh? I've never had any done that fast, but I probably cook at a lower temp most of the time, with the cooker full.

Some folks have no problems with K, and then some folks like myself report having problems of coal suffocation overnight, ie, waking up to low temps and then stirring to knock the ash off and get temps to go back up. (No such issues with the Stubbs.) I'm starting to think that the level of humidity in the cooker (full water pan and full of pork butt) and just how low you're cooking at has something to do with this, but I don't know. Anyway, glad your cook went well. It certainly helps to get a good nights sleep.

7 1/2 lbs each. 240 at the dome, but my dome and top grate read the same using a clay saucer instead of water. I didn't have to stir the fire and it was 240 when I went to sleep and 240 when I woke up. My WSM seems to like 240-250 and settles there easily.

Thanks. Yep, that's hotter than I've cooked with K, and I wonder if the added humidity of the water pan contributes to K suffocating itself.
