Put butt on 9:30 this morning, let temp get away during the first hour, temp went up to 450 ish for maybe 20 mins or so ( foiled empty water pan). got temp down to 350 and pretty much stayed there the rest of the cook. At 1:30 meat thermometer read 195 ish, foiled and let on the cooker to just about 200, put in paper lined cooler for 2 hrs, pulled and tasted great.
Any thoughts of what I could have or should have done different.
the end result was pretty darn good, so all and all I'm happy with the cook. Will be cooking high heat again, for sure. John
