Decided that I need to season the smoker and burn of the new before actually cooking some meat. Used the Minion method to make it a long and slow deal and added several chunks of hickory to really make it right. So far the temp has stayed in the area that I like to do things like Butts and large meat. I hope this proves that I have a good idea of how to make things right on the smoker.

I bought some BB ribs to do my first cook so I believe that I will try for a hotter burn for that . The thermostate is about 12 degrees below what it should by using the bolling water test so I'm looking for 282 degrees for 4 hours or more.

I do BB hotter as well, around 275, for about 4 hours ( I do foil for a period) so you should be good.
