Newbie here i have just added my first ever WSM to my small collection of Q's, long time user of Webers but i gotta say i'm loving this baby
I mostly use lump and only had this on hand when i did my first cook-ups and was concerned about holding a steady 225f on this without any spikes as against using briquettes, but needn't have worried i found this so easy to hold true & steady.
Anyway thought i'd share my first beef & pork ribs on a WSM
Prepped and going on

Held perfect all day

After 7.5 hours
