Smoked a chuck roast for pulled beef and some country-style ribs this weekend. I lit 20 charcoal, shooting for 250, but my 18.5 settled in at 230 with all vents 100%. Took a little bit longer then I had planned but I started things early enough that everything was still done in time to eat. I'll probably light a few more to start next time just to try and get closer to 250. I'd rather be able to close down vents to reduce temp so that if needed I could open back up to increase.
