I just started a 16lb brisket in my 22.5". I can't believe how much better the WSM is when compared to the cheap offset I used to use! It basically finds 250° and stays there with little adjustment.
Fogo Super Premium has been amazing! Consistent temperature, no crackling (it burns almost silently), and gets back to temp very quickly the few times I take the lid off to spray. Some lump charcoal burns up like paper, so it's nice to see a product like this that delivers! It's made my first WSM experience so easy!
I'm looking at other brands to try, if anyone has any suggestions.
That looks great, Jeff! Glad you enjoyed your first cook on the WSM, your BBQ experience shows well in that sliced pic! I'm full, and would line up for a plate of that brisket!
