First cook on WSM to begin!


 
OK, so I wanted to follow up on this one. I heated up the left over last night for dinner. Wrapped in foil and placed in 250F oven for about 2 hours and these came out so good! My issue on the initial cook was they were obviously not left on long enough. THough they were cooked through, just not tender enough.

I have to tell you though, the extra couple hours last night to heat them up and finish them off was absolutely worth it! Can't wait to do couple of chickens tomorrow!

Sounds like success. Keep a log so you'll know what you did right and correct what you need to. If you're anything like me, when the next rib cook comes along you won't remember the good or bad. Also sounds like you learned that the 1st ingredient in BBQ is time.
