First cook-off


 
I am going to be cooking for my first time in competition. My job is to cook "Chef's Choice" category. It has to be a main course and ribs, brisket and whole chicken is out. Turn in is at 10:00 am but I dont mind waking up a little early, plus the smoker will already be going. I was thinking a pork loin, 3 to 5 lbs. Any thoughts or other ideas on what to cook would be greatly appreciated. Thanks!

If you want a quick cooking meat, then pork loin is a good choice. Other options might be beef tenderloin, skirt steak, flank steak, flat iron steak, chicken drumettes (meatier than wings), fatty (smoked sausage roll), meat loaf off the top of my head. My take on lean pork and chicken is that those meats are blank palates and need flavoring help via rubs, marinades or sauces. Welcome to the forum and good luck! Let us know how you do.

What's worked well for us when it is main course (and is easy to cook with other things going on) is:

Meatloaf
Twice Baked Potatoes
Baked Beans
Grilled Tomatoes

Thanks guys! I was gonna do my pork loin with my homemade rub with fresh rosemary and garlic slices placed in little slits in the meat. Also I was gonna use a brine to help keep it moist throughout the cook. Anyway I will try to take pics and let you know how it went. Again thanks!

J, nope. This is our new teams 1st KCBS and we decided to concentrate on the comp. Come by and say hi ,you are welcome to nibble after turn in. We are doing PC on July 23rd. At Angels Camp. Blues and Bones Bands and BBQ Comp.
