First Cook and Apple Juice Can Chicken

Just finished the first cook in my new WSM. I was amazed how well the thing held a constant temperature. I dropped the probe of the Poulder digital therometer in the top vent to monitor the progress.

Ribs and chickens were rubbed down with an ancho chili powder based rub the night before.

Instead of the Beer Butt Chicken, I put apple juice in a cleaned out Coke can and added salt and pepper. Cooked the big Butterball hens for five hours. It was incredible!!

Ribs were great. (note to self, get rib holder) Kids asked why my kettle ribs never fell off the bone like these. Today was just great.

Thanks again to everyone on this forum. Kids thought I actually knew what I was doing. (wife knew better...)
