First butt is on!

Well, picked up a 9 lb butt from the local market here on Saturday. Trimmed and then covered in mustard and rub that I have had around for a bit.

On the WSM with 4 apple and 2 pecan chunks at 7:30 PM tonight. So looking forward to how this one turns out. Maverick has been reading grate temp of about 240-243 for the last hour, so I think I will turn in for a bit and check on it in a few hours.

Will have picks up tomorrow!!!
 
OK, up at 6 am and coals virtually gone. Grate temp was at 214F. Loaded in some more bricks and now temp is shooting up to 315F and will not come down. Any suggestions?

Butt is sitting at 181F and holding strong though. Just dont want the temp to get out of hand here.
 
Like Jimmy said protect the meat first, shut the vents down to one open and only an 1/8 or so, if no effect there after 15 minutes then shut down the top vent just a little etc. if it is still rising.
A lot of people cook their butts at that heat so it is not a problem especially if you give it some liquid in foil. Just will be done sooner.
 
Thanks guys. I did dial the bottom vents closed and figured I would go for my morning bike ride. Nice 20 km ride in the country.

Came back and butt was at 201F and grate temp sitting at a nice 271F. Poked with a fork and slid right on through. Just perfectly. Pulled off, foiled and now wrapped in some towels and sitting in the oven chilling for a while.

Time to figure out a sauce for this now for dinner!! Any suggestions?
 
Just pulled it after sitting for the last hour and half. Internal temp got down to 160F. Bone came clean out. Just a thing of beauty!!

Sounds good Derek, listen maybe you did and I did not catch it but let the meat cool down on the counter for 20-30 minutes before foiling it and putting away. Otherwise it will continue cooking while it is in the box. Just in case you did not know.
 
Bill, good point, but I didn't do that. I foiled and put in the oven, (not on), and kept the maverick in it. Dropped nice and steady over an hour and then I pulled it. Gonna go reheat now and get ready for dinner!!
