I could not wait until the weekend so I decided I would fire up the new WSM last night. Well I just wanted to break it in before the weekends first cook. Now I know I have expereince with maintaining a fire from my fish smoking days but this is soooooo easy. I figured I would place a pot of cold water to absorb some heat energy, besides the water pan. I had it setup and closed up by 7:45 at a beautiful 230F using the minion method. By 8:30 I was at a steady 255F at the lid. By the time I went to bed at 1:30 I had it at a solid 250F at the lid. This morning at 7:00 it was 245F at the lid. I slightly adjusted each vent, got ready for work and at 8:30 it was just over 250F.
At about 8PM I could not resist and ran up to the store and grabbed a half rack of pork ribs, that's all they had left. I did nothing to it but some home made rub. I ate them at 12:30, probably could have stayed on a bit longer but they were good.
Thanks everyone and thanks especially to whomever owns this board or else I may have ended up with an NB.

We all need to thank Chris for the job he does, this is the best site dedicated to a single cooker on the net.

Not only should we thank Chris, but we should all thank each other for keeping this place friendly and flame-free. I can't tell you how much I've learned from hanging out here, and I am never afraid to ask questions because I know I won't be "laughed at" or put down.

Thanks, everyone! /infopop/emoticons/icon_biggrin.gif

By the way, Keith -- besides the ribs, what did you cook, and how did it turn out?

Well I did not cook anything. I kept reading how the first burn or two run hotter so I decided I would get the smoker seasoned. The ribs were just because I could not resist smelling that wonderful wood. I had to put something on there. I was just going to do a burn and not pay attention to it but I had to see what all the talk was about so I watched the temps. This weekend will be the real first cook.

I think I would have broken down and done some ribs, too. Have fun on your first "real" cook!
