First Brisket

Found a 13.5 lb select packer at Walmart. Nothing but Montreal Steak seasoning and hot and fast. Overall I was happy. Very nice smoke ring. Burnt ends turned out great. The flat sliced nicely, but I think with transport time and then sitting in warming oven for a while dried it out a bit. Was still very tender, and had enough au jus left over to help out.

Thanks Tony! Guests all loved it. It was nice to finally be able to establish a baseline with brisket. Like everything else, it'll get better with practice.

The pork butt I did was polished off in no time. Didn't even get any shots of that after pulling. Haha.
