First Brisket...and some Baby Backs for Good Measure

So I'm smoking my first brisket today. It's a 6lb flat from BJ's. I trimmed it to 1/4, coated it liberally with Magic Dust last night, wrapped it in foil. Twelve hours later...

I decided to go with K after reading a good bit here. I used the MM with half a chimney, got everything together with 6 chunks of hickory and were off!

The brisket went on at 9:15am EST and 30 minutes later the WSM seems to have settled in nicely around 250-255 degrees with the bottom vents fully closed. Top vent at 100%, of course.

I put hot water in the bowl, filled it approx. 2/3's.

I'm close to the halfway point. I'm gonna flip her over, baste, add water and put the ribs on the top rack in 15 minutes.

I haven't had to do much to keep temp around 250 degrees. I'll take a picture and post. Temp on the brisket is 170. It actually has gone down to 168 and has been as high as 171.

Temp dropped to 164 after adding hot water and ribs. I'm still looking to smoke at 240-250 degrees.
