Fire roasted peppers, and jalapeño mango sausage


 
Why blacken the peppers? Is it to go in salsa or something?
I fire roast them to remove most of the skin. Then seed them and peel them.

Then I stuff them with mozzarella cheese, cracked black pepper and fresh basil.

Bake or heat in a gasser 375 for about 20 mins and they are a tasty side. And carb friendly which I need.

I'll post pics tomorrow. They're going along with pork ribs.
