Fire danger has abated - back to charcoal!


 
Fire season hasn't been declared over quite yet, but we've had a couple of weeks of heavy rain which drove the official fire danger to "Low". Regulations allow for charcoal fires when the danger drops to that level, so I'm celebrating by smoking a couple of pork shoulder roasts in the WSK!

I've been cooking on the Genesis Platinum since June, but as good as it is it still ain't charcoal. I've missed that smoky goodness, and using the WSK.

I'll try to get pics for you when they're done.
 
BTW, once again I come away amazed at the performance of the WSK. After the temp stabilized at 250 degF, which took a half-hour or so, I didn't have to touch it again. It went hour after hour, not varying more than about 5 deg.

If anyone is still on the fence about the WSK — it is, after all, a considerable chunk of money to lay out for a charcoal grill — take my word: it's worth every penny.
 
I’m seriously thinking of getting one. Amazon has them discounted and I have about $200 in points. There’s also a nice one for sale about an hour away from me. I saw one recently for $1600, it was about 2.5 hours away but I missed out on that one.
