I just can't wait to get smoker started as it has set idle for 2 wks now! I'll have to wait until approx 9-10 pm tonight to fire-up as have to pick son up after football prac and when I smoke- I like to have a few brews. I plan on doing a butt or maybe two and contemplating on maybe trying to make my own bbq sauce. I have to somehow reduce the costs of smoking as the meat and charcoal/smokewood cost plenty! I'm wondering how much money the avg. bbq joint charges for a lb of pulled pork and approx. how much does it cost me to produce a lb? I'll have to do some figuring here! Anyway, the aroma of pork slowly cooking while charcoal and hickory permeates the air while having beers is just good relaxation therapy after working your ssa off all week long!

I agree great therapy, don't forget to add in the cost of the brews

Im sure it turns out not cheap, but thats not why I do it right?

oh I added in the costs of brews- right now at some quick stops around here they have 30 pk of buds for $17.49- comes to probably under .60 a can- can't beat that! Oh well, I'm approx. 45 min. into my smoke session- have dome temp running around 265 so I'll assume that have a grate temp around 250- I can live with that. I'm guessing that's a decent target for smoking a boston butt.

Doug, Good luck with your cook. I was trying to figure out what time zone you were in, I'm guessing the left coast or you got a very late start.

Sounds like your off to a good start for the weekend. Me, I have to work this weekend, so not much cuing for me.

You know, for the same amount of money you could enjoy real beer, like a good pale ale.

Just not 30 of them. But 24 of a great thing beats 30 of junk any day for me.

Doug, are you sitting out with the smoker tonight? I think tomarrow night, I will pull a true overnighter just for fun's sake. I've done alot of overnighters where I sleep in bed, but I'm going to be training for my first comp so maybe I'll try sleepin in the lawn chair

I'm in and out w/ my smoker- I think I need a portable laptop here! Bryan, I'm on the East Coast in Ga- the good ol' South where it gets plenty hot and humid! My smoke session so far is going well but then smoking a butt seems to always do well and I really like them. It's what I'd call a true bbq! I even attempted to make my 1st bbq sauce tonight to use as a condiment- in Ga and the Carolina's- a thin vinegar based sauce is used. I kinda followed a couple recipes then made adjustments in order to get what was looking for- kinda thin- not thick but not watery, a vinegar taste somewhat and not too peppery or overly sweet! A good bbq-er needs to eventually make the sauce for the meat as well is what I'm currently thinking! I really enjoy these all night smokes- the wsm kinda turns a small patio into a sanctuary- as long as you have plenty cold beer and a radio! I work a fast-paced manufactring job assembling the EZ-GO golf car and all week just dream about the weekend for when I can smoke . Sorry, Didn't mean to get long winded here!

It came out ok although I think I had a couple too many beers during the process! Time flys when having fun. My wsm did run a little hotter then I wanted after it ran for awhile-approx. 285-295-dome temp. Could remove dome and let temp drop but would soar back up once back in place, could be one of many things I guess. <BLOCKQUOTE class="ip-ubbcode-quote"><div class="ip-ubbcode-quote-title">quote:</div><div class="ip-ubbcode-quote-content"> </div></BLOCKQUOTE>Hey, It keeps me out the bar!
