Though I turned 50 earlier this year, I'm a glutton for punishment and work 2 jobs and am working on my Bachelor's Degree. The second job really isn't because I work on the Model T fleet at Greenfield Village in Dearborn, MI so it's like being paid to do what I love as a hobby. Anyway, that leaves me one day a week that's free (Saturday) and it's usually tied up with what the wife wants, er, would like, us to do.
Yesterday, I had a rare free day, and the weather was nice, so I took advantage of it and planned a dinner. I ended up making Chicken Bombs out of the WSM cookbook along with smoked jalapeno cornbread with bacon in my cast iron skillet.
I used the rest of the last bag of KBB I had, along with pecan chunk wood for the smoke. All in all it took a little under an hour and a half to finish. As a side I made 1930's mac and cheese from a CCC (Civilian Conservation Corps) cookbook I got this spring.
Everything came out amazing! Lots of leftovers so we had dinner tonight when I got home from the Village and I'll have lunch tomorrow. It was great to get something in on the smoker, I've only used it two or three times all summer.
Hope everyone else had a good weekend and made something yummy!
