I've seen others turn their grill grates upside down like a griddle. It was just the wife and I at home Sunday and she picked up a tuna steak, which i marinated in OJ and garlic for an hour. Took it out and seasoned with Old Bay Blackened Seasoning. I scraped the bottom and the grill grates and cleaned them up pretty good. First thing first.... hot coals in the Jumbo Joe:

I got the 'grate griddle' hot and put some olive oil on it prior to the tuna steak. Steak On:

3 minutes on one side, flip, 2 minutes on the other. We like it a bit sashimi style. Turned out great, but hard to mess up good tuna. Here is a shot of the finished product. I liked the 'sear' of the tuna on the upside down grill grate. worked grate!

Thanks for reading.

Looks great! Love tuna, but don't like it raw in the middle. With your cooking times, the tuna must have been just perfect!
