Doing some deep cleaning of the freezer since we are in self quarantine for two weeks after coming back from a vacation cut short by all the craziness. I think we have enough food for months if I really had to stretch it out but going for the oldest stuff first. This 3 lb elk sirloin tip roast got cut into stew meat, fried in bacon fat on the gasser and then into the instant pot with caramelized onions, whole garlic cloves, red wine, beef stock and a few herbs and spices. Seriously good eats served with parm and jalepenos. Excuse my messy bowl I had eaten some liverwurst and pork rinds with mustard for an appetizer and reused the bowl.
My wife is not an elk fan and may have been lead to believe this was beef and she cleaned her bowl and declared it a wonderful beef stew!
