Egg salad

6 hard boiled eggs, cold
1/2 fine chopped red union, or some mild union
2 Tbs homemade mayonaise Recipe
1-2 Tbs mustard, adjust to the strength of the mustard and your preference.
1/2 ts Salt and pepper.
1 Tbs lemon juice.

Use a egg slicer to make staves of the egg. Mix ingredients adjust the tast to your liking, and enjoy.

This is just a suggestion, you can add shrimps, bacon, ham, peppers, pickles, cooked cubed vegetables and different spices.

I sometimes add a bit of truffle oil to the mix.

I'm a fan of celery seed in the mix & a little dash of smoked paprika ontop before closing it up.
