What is special about DP for use in a marinade? Scott S said he didn't taste it in his tri tip, so what is in DP that's not in other sodas? Does any soda work? Never used it, but am curious.
 
Good question. I know folks make BBQ sauce out of DP and from Coke.
It's not that I couldn't taste the DP, What I meant was that the beef wasn't sweet like DP and didn't taste like I was drinking a DP due to the other ingredients added to the marinade.
 
Ok, I see. Maybe I'll try some soon, although I do remember trying to drink a DP years ago and thought it was pretty horrid. Maybe I'll go for the root beer or 7 Up

I don't know the science behind it (if there is any), but I used to make a bourbon and coke marinade for ribs. The claim from the original chef (Robert Rainford) was that soaking overnight in the coke helped to break down and tenderize the meat. I know Coke can dissolve teeth and even small bones over time, so I'm not surprised by the tenderizing claim. However, I never noticed any big impact. Then again, the last time I did that recipe, I was still trying to "smoke" ribs on my gasser using one burner and some foil packets w/ wood chips.
