Double Butts


 
I've pulled the smoker out after a month hiatus. 20 lashes for me with a wet noodle.

2 butts, 8.5 lb each. I'm using pecan as my wood. Any thoughts about this particular wood? It was all I had left, so I figured "Why not?".
 
I use more pecan than anything else. I especially like the color and the flavor it tends to impart to chicken and steak when I use pecan chunks along with charcoal for grilling. There is one BBQ Guru - Danny Gaulden, perhaps - that I read somewhere uses pecan exclusively.
