When I can, I like to sop my butts with a mixture of my rub and applecider vinegar/water mixture or apple juice and my rub. I do this after the bark has formed. I've found this intensifies the flavor of the bark as you're adding more spices with each layer you put on. (I can really tell a difference when I don't use the sop with Mr. Brown) I read the .pdf on here from Harry Soo and he seems like he's saying that he just sprays it with apple juice. Is he wanting to just keep the bark from getting too hard? If not, I'm not sure I understand why you just spray apple juice on your butts or ribs. Thoughts?
