Do I use the water pan?

Actually I have 2 questions. I'm going to do a 17lb brisket. Is it ok to cut a brisket that size in half and do I need to use the water pan? If I can I'm going to look into placing the brisket on the top rack between the handles. If it don't fit I'm gonna have to cut it in half. Is that ok to do . Thank's , John
 
John everyone is going to tell you something different. If your smoker is new, use water. You don't have a gunk build up and the temp will be a little harder to control so the water will help. When I started, I used water. After a few cooks, I now only foil the water pan.

I say trim it but leave it all together on the top rack. 17# is a huge brisket! That's awesome!
 
Thank's for the reply's guy's.. It's a big hunk of meat... I'm gonna go waterless. Dave, thank's for the info in the other post.
