Hi Brandon,
I did cook a 3.5 lb roast in the pan uncovered for the firs two hours. All you guys have given me great info for my next roast smoke, which will be around the 3.5lb size since I cut the 20 lb roll into 6 3+ lb roasts. I figure I should do much better next time.
