Can't find either one of them around here. So currently it's Morton Kosher for us
 
Unable to find DCKS anywhere, I relented and tried Morton Kosher "coarse". It's not quite the same as DC which is "flakier" where the Morton coarse is more granular crystals, like regular salt just bigger. I'll use it until I can find DC again. Whatever you use, remember to measure by weight, not volume, unless you're just "seasoning to taste".

 
I just use pickling salt these days for general use - good consistent size and very pure (to prevent clouding when used in jarring). I also have a really nice flaky finishing salt for last minute addition at the table etc. Face it...all these salts are just sodium chloride. Different shapes, sizes etc, but all exactly the same if they are dissolved. Pickling salt is 1/5th of the price of the "gourmet" brands.
