I quit using water last year and went to the clay saucer in my defuser and it's been great
For my son's cook yesterday, I wanted to keep the pit as stable as possible, so I stacked my defuser out of my mini into my 18.5"
Foiled as usual, and had the most stable cook ever. Barely had to touch the vents at all
Mine are 12" you could (and should) use 14" but you'd only need one if 14. The two at 12" really worked good

The members here are always saying to try different things and use what works for you, looks like you did just that.
