Defrosting experiment at room temperature

So I had forgotten I wanted to bring a pork roast over to a friend’s house for Thanksgiving and didn’t want to shop again 😬. Found this guy in my freezer this morning. 9C7354AD-3A36-4724-8E13-D05A25A9630C.jpegI know that “counter” and room temperature defrosting is a very sensitive subject and having worked in the food industry almost my entire career I get it…to a point. So I put this in my sink at 7am and covered it loosely with a towel. It was hard frozen when I did this.8E43E725-78F6-4F75-97A2-7C970A40678F.jpegAfter returning home from too long of a Wednesday before Thanksgiving work day at 7pm and uncovering it what did I find? A still partially frozen and ice cold ❄️ pork roast! Center was still somewhat frozen and ends were very cold.
Not an exact science…I know…but I think just having the towel resting on top made a big difference in keeping it cooler. 12 hours at room temp in my sink…almost perfect actually!
