Deep Dish Pizza


 
I was inspired by your post last month John and tried my own. I used my WSM with the middle section and charcoal ring removed. I put two fire bricks on their sides in the center of the bottom, and filled the rest of the bottom (again, without the charcoal ring) with lit charcoal. I set an 8" CI skillet with the pizza on the bricks, and put the WSM lid over it. Even though the dome temps never got above ~350, it was perfect in about 28-30 minutes, I did a couple of them. My family was impressed at how they turned out, I think they were expecting some sort of burnt, inedible disaster :D
