I ran some tests on the Vieluxe to see if I could do a smoke infusion/sous vide type cook with just the smoker burner lit. I started on Low with increase to Med @4:00 then High @4:30. Here are pics of the setup and signals temp tracking
Then I smoked some pork chops to 140f and seared them on the WSK (sorry no pics of finished chops) - the surface of chops after smoking were very dry (maybe use a water pan?) but had a lot of smoke flavor
I guess if you wanted 250-300f you might be able to use the warming shelf, but your results would probably be different since the vieluxe shelf is quite high at vent level
