Damper-only approach like this with a Heater Meter?


 
I use the fan to get the smoker up to temp, then after that it is just the damper. The fan just gets the smoker to temp faster. If you don't care about it taking a bit longer to come up to temp, just don't use the fan.

Another problem with using the exhaust to control air flow, is the smoke will get stuck in the smoking chamber and you will inconsistent results or overly smoked food
 
I've been experimenting with my "Chopper Damper" lately without using any fan, but like others said, on the input vent not the output. The chop damper opens up a wide direct path for air flow, it works surprisingly well on a kamado, so far I don't miss the fan at all. This damper is in the early stages of development, right now it works great for higher heat cooks, it's a bit lacking for low and slow cause it leaks a bit and I am not sure the servo will survive too long. I've got some ideas to fix these issues but need some time to work on the next version..
